For that, you perform in Linux Mint Cinnamon a rightclick with your mouse on the icon of Firefox in the panel of your desktop - Edit - Command: change this into:
firejail firefox %u
In Linux Mint 20 with Cinnamon, there is no option to edit the command for a specific program icon when it is right-clicked. The icons are a part of a "Grouped window list" applet.
