I've updated the README with detailed instructions for Windows users. https://github.com/robertdcurrier/erddap2mcp/ I'm not a Windows user so please provide feedback if there are any problems getting this to work. When I have a chance I'll fire up Parallels and test it. Not enough cycles available now.
