I am putting out feelers to see how much interest there is in a
beginning cheese-making class. I can reserve the Miller Presbyterian
Church kitchen on the afternoon of April 16, and I'd like to do my
"trial run" there. I think $25 per person for the four-hour class
will allow me to cover my expenses (rental of the kitchen, and
materials). The class will be hands-on, and I hope to cover yogurt,
paneer, mozzarella, and chevre. I may have time for one or two other
dairy products as well, but I know if I try to fit too many in, four
hours will not be enough!

For those of you who are not familiar with north Lyon County, Miller
is approximately 30 miles north of Emporia. It is two miles east of
the Admire (Osage City/Council Grove) turnpike exit.
