Fish Question

Paddling Mud Creek Lake a few days ago, there was a shallow weedy area near some lily pads where fish would jump each time I ventured close.  They were clearly set off by my canoe.  They weren't little minnows, but also not large fish.  Occasionally one would rainbow completely out of the water, and I'd estimate maybe one pound max.  This doesn't match with fish behavior I've seen before at this time of the year and I couldn't get a good enough look at them to identify.  I've been curious what they were ever since, and I'll bet it's obvious to someone out there.  Anyone know?
