While it can be done quite a bit of the functionality will be lost so not a good idea. The two SBMS0 will not share information so is like having two 24V batteries that do not care about each other.
So for example one of the 16 cells will be first to be fully charged and the SBMS0 where that cell happens to be will know the pack is fully charged and stop charging and set the SOC to 100% correcting any SOC error that accumulated since last full charge. While the other SBMS0 will have no idea why charging stopped and will not be able to update his SOC thus just one of the SBMS0 will display the correct SOC.
Is there a reason you want to go with 48V? 16cells EVE is not that large of a pack capacity to get any advantage on going with 48V over 24V 8s2p
My battery is also made with 16x EVE cells just the older 280Ah cells. The photo is from 2022 when I set this up and it works great since. EVE cells are decent.
