Correct remote shut off wire connection

Please confirm, this is the correct way to attach the remote shut off?
Into the 104+?

Yes but you will also need to connect the EXT IO4- to battery+ trough a 1KOhm resistor.  Then as you show in the photo connect the yellow wire to EXT IO4+

Yes. You connect one terminal of the 1KOhm resistor to Battery+ this resistor limits the current in case of fault like a short circuit then you can connect the CAT6 wire to the other terminal of the resistor and the other side of the CAT6 wire to EXT IO4-
If the CAT6 wire gets disconnected and shorts to GND (Battery-) the max current that will flow trough it will be limited by the 1KOhm resistor to 12 or 24mA depending on battery voltage so nothing will happen to the wire.

Do I do the same thing for the multiplus on 103?

I do not know what you will be controlling with the EXT IO3.
If is a Victron Battery Protect or a Victron inverter then both wires from EXT IO3 will connect there and none of them to Battery+
