8s2p and 2p8s means the same thing thos 8s2p is the preferred usage.
There is no other correct configuration other than groups of two cells in parallel then 8 of those groups in series. It is not allowed to parallel two Lithium batteries only cells can be paralleled.
Yes in DIY world there may be many examples of incorrect configurations but that is just not a proper option.
Not sure why compression plates will be any problem. I also use compression plates on my 8s10p battery see photo below. There are groups of 10 cells in parallel (in absolutely no way different from a single cell) then 8 in series tho split in to two physical groups as else it will have been to heavy to lift.
