I do like the ideas presented about using this for a beginning of the year book by the teachers welcoming the students to a new school year. There is something exciting about using the iPad or computer to read the book created by another and it also sets the stage for the use of technology throughout the school year. 

This is something to share with the other teachers on the staff and brainstorm ideas for its use. I did find the online version easier to use than the downloaded version. It really seemed to walk me through the process of preparing the book and then I could download that to my computer and share it. Also, there were times when I hit the wrong key and instead of shift got enter and lost the page I was working on. At least it was only one page, but it was a warning that with the epub online it is important to save often if you are writing longer chapters.

For elementary students it would be difficult to have them write much of a book, however I would suggest that they prepare visual stories using drawings or digital art and use epub to produce a picture book of something like their favorite things. This would be a great PR piece to parents.
