Can someone explain why Professor for beef explanation demo_2 for log-linear function has choose
this model over the other show down below?

LPop failed the t-test for the 1st model so he went with the 2nd.

You're right in that the ln_POP should be removed since the variable fails the t-test.  I uploaded my excel spreadsheet for this HMWK in case you need to reference it.
 
I got 20/20 on this HMWK assignment.  You'll see that I discarded Ln_POP and kept only the intercept, beef, chicken, income (Y), and the 1952 dummy variable.
