The frozen bananas, once blended, give a texture that's impressively similar to that of ice cream but I'm not going to lie to you...this tastes nothing like ice cream. It tastes like bananas (surprise!) but it's absolutely delicious and so versatile because it can mix with a variety of different flavor add ins.

For this recipe, I decided to give the banana ice cream a twist by adding my two favorite fruits: strawberries and mangoes and what I ended up with was a yummy, refreshing, tropical infused ice cream made with happiness and rainbows.

Combine the butter, milk, and egg in a small bowl and beat it lightly. In a larger bowl, pour in your flour, salt, baking powder, and sugar and gently mix it. Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture. Pour in your milk mixture and stir it all up together.

You might expect the beet flavor to be overpowering, but it's really not. Strawberries and bananas are the dominant flavors and really sweeten everything up. You get just a subtle flavor from the powder that goes nicely with the berry-banana combo. It's so good in fact the kids have asked for this smoothie more than a few times already.

I got a recipe similar to this around l970 from a lady in my church in Martinez, CA. It did not include pecans. One thing I do differently is to pour some of the jello alone on the bottom of the tray and let it jell. (I need to use 3 small packages of jello.) Then I spread the softened sour cream and let it firm up. To the remaining jello I add crushed pineapple (small can), mashed bananas and the thawed sweetened strawberries with the juice. That goes on top and is refrigerated until firm. I always make it the day before. My kids insist we have it for Thanksgiving, Christmas, and Easter!
