When to pick beetroots

Hi:

We have planted a few beets and not sure of when to pick them. Any suggestions on how to tell when they are ready to be picked?

I usually just dig around them a bit and check out the size of the top of the beet if you dig gently you can pull the large ones loosen the soil and put the smaller ones back in the ground to continue growing.Tony

I think you can also eat the leaves?

I've been mixing the beet greens in with my salads. I usually pick small leaves early in the season. The larger leaves are a bit tough. I think they can be cooked but I've never tried it.  tony

You can cook them the same as chard. i have not done it myself, but
enjoyed beet leaves cooked by my brother's mother in low, one of the best
cooks i know.
