How can I create an event on a specific day and time?

I can't see how I can create an event on a specific day and time. Is it possible? (I can't believe I have to ask this; documentation is only about meta stuff like installation.)

What I mean to ask is, (in the UI) is it possible in Easy!Appointments to set up a one-off event on a specific day and time, then have multiple people sign up for that one event, and if too many sign up, they get put on the waiting list. If a signed-up person later cancels, the first person on the waiting list is moved off of it and onto the signed-up list (and they would be notified that they are no longer on the waiting list). Thanks!

Hello! 

You can use the working plan exceptions and a unique service and provider to create event slots for multiple people 

But as "The Bat" said, for the waiting or anything else you will need a customized package.
