Ido believe that the day will come when I will use a bread machine for something more sophisticated, but for once this week I am sharing the recipe that doesn't require too much thinking or meddling. Sometimes it's just nice to make certain foods almost on auto-pilot, especially for basic stuff, like white bread.

In the last 3 months I hardly bought any store-made bread, baking about a loaf every week at home, using bread machine recipes. And, I've noticed a couple of trends/issues when making bread: sometimes the bread comes out way too dense, or the loaf does not rise enough and, as a result, comes out even denser. So, here I will describe the homemade bread recipe that works for me to produce a less dense bread in a bread maker, using a basic cycle.


- Use bread flour, not regular all-purpose flour for all bread machine recipes. Bread flour contains a higher percentage of gluten than regular all-purpose flour. Using bread flour will produce taller, less dense loaves. If you use all-purpose flour (which has smaller percentage of gluten than bread flour), your loaves will be flatter and denser.


- When adding yeast, make sure you add it last, and add it on top of dry ingredients (flour). Make sure the yeast does not reach wet ingredients. Basically, make a small indentation on top of flour and add the yeast to the indentation, just like this:


And here is the simple white bread recipe. I started with the recipe that came in a little booklet together with my Williams-Sonoma bread machine, and I tweaked the ingredient measurements based on my preferences. It takes 10 minutes to prepare all ingredients together, and then it takes 3 hours and 15 minutes to bake the bread in a bread machine.


I love this recipe and have been using it for years! We make 1-2 loaves a week.

Ive used it as a base for sourdough bread in the bread machine-Usinf Sourdough starter and whole wheat flour.

Ive used it as a base recipe for 12 grain bread.

I like adding an egg to our loaves, as we find it helps get it nice and fluffy, but this recipe is perfectly fine without!


Measure Carefully: I tested this recipe using metric weights, then converted that to cups for your convenience. I suggest weighing your ingredients for the best results using a digital scale. Learn Your Machine: Just like Air Fryers and Instant Pots, bread machines will have differences from brand to brand and model to model. The good news is that most of the household bread makers work in generally the same way, but if you are having trouble with your machine, feel free to reach out, or search out others using that specific machine on the web. Bread machine users are a helpful bunch!


White bread is the perfect canvas for so many delicious sandwiches! I enjoy this bread for breakfast, toasted or fresh, with a bit of butter and strawberry jam. If I have it, fresh Homemade Apple Butter is delicious on bread maker bread too.


Try Vegan Eggplant Sandwhiches (like a BLT!), Banana Fluffernutters, or Tuna Melts with your fresh white bread.

This bread machine bread recipe is the foolproof method for getting perfect white bread every time! Just dump in all the ingredients and let the bread maker do all the work! With about 5 minutes of minimal effort you can have soft, warm bread in just a couple of hours!


We have used this exact dough recipe for all sorts of recipes. Sometimes you have to knead it with some flour to get the right consistency depending on what you are making, but it works like a charm in these recipes:

I am never buying bread again. This is so much better and extremely easy to make. I took a warm loaf over to my parents, and my mom is going to dig out her old bread maker so she can start making it. Used regular yeast because I had no quick rise yeast, and it worked just fine. Followed rest of the recipe as written. I am grateful to have found this recipe. Thank you for it.




i found this recipe in January. I have made minimum 10 loaves. My husband and I LOVE this recipe! i have given loves to friends and family and they have enjoyed it as well. i have made the bread as directed and made a mixture of butter, cinnamon, and brown sugar, pressed the bread out and spread the combination and rolled the bread and baked according to directions. YUMMY!!!




Made this bread exactly as it instructs. I expected disaster because of how quick and easy it is but to my surprise it was perfect! It is the only bread I bake now. . . And sometimes at the last minute! Thank you for such a delicious and quick bread re ipe.


King Arthur Unbleached All-Purpose Flour is perfect for bread machines. Its relatively high protein level (11.7%), and the quality of that protein, allows you to use it in recipes calling for either bread flour or all-purpose flour. This recipe makes a reliably high-rising loaf, with soft, springy texture and nicely balanced flavor.


Interestingly, I read in a number of sources online that the all-purpose flour should produce a denser loaf. That was not my experience. Perhaps it would do so, if it was only a 1 lb loaf, instead of the larger 2 pound loaf here.



I tried a couple of times with the all-purpose flour figuring perhaps I had made a measurement mistake but every time the center of the loaves collasped and the air bubbles inside the loaf were much larger, created big holes which made it messier to slice.


This recipe was tested on a Welbilt Bread Machine. I bought it at a thrift store for $6.50. It makes great bread but every machine is different. Please follow any specific instructions provided with your machine if they differ from how this recipe is written.

I think you left out the oil in this recipe! I have this recipe, but use 3 cups flour, 1 teaspoon half sodium salt, 1 1/2 Tablespoon canola or olive oil (depends on your taste), 1 1/2 cups water 2 Tablespoons sugar (you can use 1 tablespoon sugar) and 2 teaspoons yeast (per my machine recommendations). Remember to add liquid items first (water and oil) then flour, sugar and salt in one corner and yeast in the other corner.

My favourite part of these bread makers will certainly be the convenience it offers. In making this Hokkaido Milk Loaf using my Bread Maker machine, it was literally fuss-free. All I did was to dump the ingredients according to the instruction manual and wait. The Bread Maker machine did all the work for me!


Hey Jackson! I think you can add approximately 1/3 more of each of the ingredients. I would recommend trying out this 750g recipe for your 1kg breadmaker. This is because it will be able to still attain its full rise. However, some care need to be given in terms of baking duration to ensure it will not be burnt!


Hi HHB, I baked this recipe for 3 times, first time with panasonic bread machine and it success ( i used bread flour). The next baked with others brand bread machine and it collapsed ( it rised well before baking cycle started). Could it because i used all purpose flour?


If I use the bread maker and I want to set it to the preset timing to let it bake at 3am so that by morning I can hv a loaf of warm bread, can the egg be placed in the bread maker without it been spoilt?


I intend to use on my KW bread maker. Usually I will set the delay function on the maker so that it will give me a fresh and warm bread in the morning. With the egg, is it ok for me to leave it in the maker until the preset timing for it to start the mixing and making of the bread?


Absolutely. I left mine for a couple of hours before. So long you leave it covered and mix it with all the wet ingredients before placing it in. However, I am not too sure if its beyond 4-6 hours. Would it be delayed that long?


Hey Janaki! Thanks for dropping by my blog ? I am not too sure on the particular Kenwood BM, but it should be the french loaf function, or a loaf function that has 2h 40 minutes bake time or approx that amount of time.


This is a very authentic recipe for ??? and if followed strictly produces wonderful bread. Making the yudane (??)the night before is essential to getting the right texture as is using good bread flour. I have made this several times and it always turns out so perfect and exactly like very typical milk bread in Japan.

Hey Christine! I am honestly not too sure about that. It is possible but based on my experience from incorporating bananas into breads, they end up not having any flavour at the end because of the long baking time (i suspect).
