I bring artifacts - an actual bates stamp and a bankers box. You will be amazed how many have never heard of these or saw one.

You're precisely right Xavier! Props are really important, and notwithstanding the practiced seriousness of law students (graduate professional students). "Show and tell" is very effective. Most students have very little actual world experience. One of my teaching themes is that I want my students not merely to be able to "Talk the Talk" but also "Walk the Walk."  Showing a Bates stamp and Bankers boxes is great. I also show the students a torn-down old PC. Most have never seen a hard drive (or solid state drive), memory cards, or the CPU. This reinforces the important fact that computers are merely machines-- even the vaunted LLMs-- while helping students to understand where ESI is located.

I use the EDRM to take students thru the ediscovery process with projects associated with each phase.
