One question, can you include new fields in a user's registration form?

I need to include the document number.

I have Dspace 5.X

do you mean new metadata fields in the submission form? If you do so, take a look into this documentation https://wiki.duraspace.org/display/DSDOC5x/Submission+User+Interface#SubmissionUserInterface-CustomMetadata-entryPagesforSubmission
