"By Subject Category" Settings and Config

Is it possible to modify the categories listed in "By Subject Category"? Also, how are those populated to appear in the search? Is that in a metadata field or a configuration setting?

Primarily, we wouldn't mind them if they were able to map to our actual subject categories to ease searching.
