Default Values on Submission Forms

Has anyone found a way to populate a required metadata field that has only 1 possible value, short of editing the source code?
I understand the XML doesn't support pre-selecting an option from a list of values. Is there a way to do hidden fields or read-only fields?
I thought about setting a default value in the collection's Item Template, but it looks like those can be overwritten by the user, which is unfortunate. (Well, plus, we have so many collections it would be quite time-consuming to create a separate template for each one. It would be nice if template could be created at the community level then inherited by sub-communities & collections).
