SVG vs XML

Hey guys,

As I understand, when I import an SVG, I loose ability to change color of a element.

In the example bellow I want to change element/line colors, but instead the background color is changed:

What should I do to have proper control, use XML instead of SVG? If yes, how can I export XML from Illustrator?

Does this code makes an SVG editable (line stroke, change color, apply style, etc) when converted?
