Before I even took my first bite of Namaste Kitchen's chile momos back in 2022, I knew the dish was something special. I'd come across a photo while searching the new restaurant's menu online: a plate of perfectly pleated dumplings glistening with a deep red, sticky coating. I'm a sucker for stuffed dough (pierogi, tortellini, samosas, you name it), and a dumpling tossed in a spicy sauce struck me as unusual yet natural. I had to have it.


At the time, Pabi and Santa Pradhan had just opened Namaste Kitchen on Shelburne Road in the spot previously occupied by Himalayan Kitchen and Bar. My husband and I split that first order of chile momos. But when I stopped by the family-owned Nepali restaurant on a recent evening, the momos were all mine.


The eight dumplings arrived puffed and crispy from their tumble in the fryer. The gingery, garlicky, spice-infused sauce tingled on my lips, and the finely chopped cabbage and onion made for a steamy, soft filling. The cold tomato dipping sauce added brightness and toned down both kinds of heat: spice and temperature. The sweet crunch of tender-crisp peppers and onions complemented the deep savoriness of the two sauces.


Instead, when she's on break from college in Pittsburgh, Sunita shares front-of-house responsibilities with her sisters, Tuka and Ishmita, and their sister-in-law, Pranisha Subba. Brother Jeewan serves and also cooks, spending much of his time making naan.


The first time I made koliva was in 2019, following the passing of my Papou Chris Metos, who was a beacon of positivity for his entire 96 years of life. After decorating and shaping the koliva into a mound, I brought it to the church to be blessed on his 40 day memorial. To my surprise, many congregants asked for a recipe, which I regrettably lacked because at that time I honestly just combined several recipes from different sources and Greek neighbors.


While mostly associated with Orthodox Christian ceremonies today, the roots of koliva trace back to Ancient Greece. The tradition has endured through the centuries. Crafting koliva weaves tradition, faith, and a celebration of life and the eternal connection with those who have passed on.


When ready, drain and cook the wheat in a pot of boiling water until tender but not mushy (about 45 minutes to 1 hour). I like to add a cinnamon stick to the water while the wheat is boiling for extra flavor. Drain in a colander for about 1 hour to remove any excess moisture before placing on towels.


Assemble the koliva: place the wheat berries in a large mixing bowl. Add the honey, chopped nuts, pomegranates, cranberries, raisins, cup crushed graham crackers, ground cloves, cinnamon and chopped parsley. Mix until well combined and adjust for taste if necessary.


Transfer the mixture to a serving bowl or dish, shaping into a traditional mound or round shape. Add the remaining crushed graham crackers on top and then use wax or parchment paper to pat down the ingredients and smooth and shape with your hands.

Dust the top with a layer of powdered sugar. I again like to smooth the top with parchment paper. Decorate as desired with Jordan almonds, edible candies, almonds, or pomegranates.

Can I keep an uncooked egg strata dish (no meat, just eggs, cheese, bread, and cooked veggies) covered in the fridge overnight for 16 hours? I usually leave strata casseroles in the fridge overnight, but no longer than 10 hours - I'm wondering if 16 will be okay. I'm using a ciabatta in the strata, so I think it can hold up to the egg mixture, but I'm not sure if 16 hours is okay. Any help is appreciated.
