I have just issued: sudo apt-get upgrade
and was told that Docky was kept back/not upgraded.
Any ideas why?

This is because the new docky package wants to remove python-docky
which is not considered a "nice" behaviour by your package mananger.

Uninstall manually and then reinstall?

Actually, scratch that - it seems to have sorted itself out in the
latest system update which involved a "partial upgrade" followed by a
reboot
