Most of my materials for the course I teach draw directly from Oscar Levin's book, 3rd edition. I am thinking of moving to the 4th edition in future.
For right now, here are the materials I have readily sitting on my computer. I have a slideshow I made about planar graphs, if that is of use to anyone, and some quizzes and homeworks that I created, deviating from Oscar Levin slightly.

Also, although it is not covered in the Oscar Levin book, digital logic circuits / adders / boolean algebra is a big part of some Discrete Mathematics courses. If you teach these topics, reach out to me -- I have a LOT of good problems and notes on these topics.
