Oncom is traditional to the Sunda people of West Java with Indonesia.
It is grown on food byproducts like the 'okara' or pulp left after
making tofu or soymilk. It resembles tempeh, in that oncom is often
grown on soy products. Oncom's active organism is different than
tempeh; oncom is Neurospora intermedia

Growth of oncom on okara from tofu and soymilk production could make a
food from otherwise wasted food-grade byproducts. I hope to grow
oncom, then teach others how to make oncom themslves - this could
allow self-employment by folks without a lot of capital all around the
world.

I have the culture and a source of okara; I need sterilization and
fermentation equipment access for the next step of trialing oncom.

This is an interesting project!  Book of Tempeh, I love it :)

Have you had any success with trial batches of oncom?  Also what kind of equipment do you require? It looks like traditional methods use a press of some kind. I believe someone (Ian?) was getting into beer brewing, but I'm not certain of the status of that project currently.

I propose a BOSSLab meet-up this Sunday!  Anyone interested?  Does 6pm work?

HI Rachel B,

I haven't succeeded in making oncom yet. I could use a laminar flow
hood (optional) and an autoclave to prepare media, and a flat clean
place to pour plates.
I think I can avoid use of a press - my okara source is prepressed.
I'd like to grow out the culture I've got sterilely and check that I'm
growing the right organism, before making oncom on any serious scale.

I can not meet Sunday, Jan 29th at 6pm - prior engagement, sorry.
I do want to meet with folks. Could we meet another night, or midday
Sunday? Maybe I could meet with folks the next time folks meet.
