Is there a way of viewing user interaction logs (per user)?

I would assuming dialogflow request logs will be the user side of the interaction log whereas the dialogflow response on the bot side.

You can use that log structure to retrieve it.

does that help? What is the goal of retrieving the logs? Maybe there are other ways to do the same.

In this case, the Audit Logging from Dialog Flow as a part Cloud Audit Logs helps you answer the questions "Who did what, where, and when?" 

Your Google Cloud projects contain only the audit logs for resources that are directly within the Cloud project. Other Google Cloud resources, such as folders, organizations, and billing accounts, contain the audit logs for the entity itself.
