I discoverd this piece of art in my 2022 vacation in cape breton. I tasted it when I got back to Qubec, it blew me away. So clean & crisp, with a light unique finish. I ordered 9 bottes the next mont shared it with friends I appreciate & respect. Everybody where overwhelm. I just ordered 5 bottles, they are meticulously packed with separators. . A firm IFLScience favorite is Banana the yellow lobster, a result of a one in 30 million genetic mutation in the proteins that bond with shell pigments, causing her bright yellow color. While she might be one in 30 million, the team did manage to find her an equally brightly colored friend in 2023.

Also on the list of unusual lobster colors is Freckles with her one in 30 million calico coloration who avoided a destiny as a lobster dinner after the staff at a restaurant released they were onto something rather special. The calico coloration is a word more commonly associated with cats, but Freckle's color manifests as bright yellow/orange and dark blue-green specks.

While one in 30 million is pretty incredible odds, perhaps the most striking coloration is that of the unexpectedly bright blue lobster. Found recently by Les Viviers de Noirmoutier, they put the odds of finding one like this at one in 2 million. Fortunately, this incredible blue lobster was saved from a culinary fate and taken to a fishing prohibited area according to their Facebook post.

Color changes like these are usually the result of mutations in the genes that code for the pigments produced. Leucistic, melanistic, and albino animals all crop up once every so often and we'll be waiting for the next lobster color addition.

"We did our best to get this beautiful blue lobster (by the way it's a small female), to prevent it from being sold for culinary purposes," Les Viviers de Noirmoutier said in a translated Facebook post, sharing pictures of the rare lobster.

Lobsters are usually a darker, dull orangey hue, turning bright orange after they're cooked. However, sometimes genetic mutations in genes that control shell color can cause these crustaceans to have uniquely bright colorations.

Blue lobsters are thought to be a one-in-two-million find, while yellow lobsters are one-in-30-million, and a two-toned lobster is one-in-50-million, according to the Lobster Institute at the University of Maine.

"We have found, with the help of the tourism office of l'Ile d'Yeu, a forbidden fishing area around the island to release it, so that it can live a long peaceful and happy life, with the assistance of Sebastian from the boat the LNA to escort us to our destination," Les Viviers de Noirmoutier said in the caption.

"I have never seen a blue lobster this bright of a blue or as pretty. We might see a lobster once in a while with a slight tint of blue on a claw or tail maybe but that's it. This is the first one I have ever seen this blue all over! And such a beautiful blue," Blake Haass, from Mount Desert Island, told Newsweek at the time. "I hope I find another blue lobster again but they are so rare you only hear of one being caught once in a great while across the state of Maine."
