The dressing works double duty to not only coat the pasta salad, but to also add cheese. Of course you can always add more cheese if you wish, but I find that this dressing mixed in gives the perfect amount.
This grilled gorgonzola chicken is one of our go-to summer meals. Blue cheese marinated chicken thighs are grilled and topped with a juicy cherry tomato salad with fresh basil and gorgonzola. Super delicious and goes with almost anything!
As soon as the chicken comes off the grill, I pile the tomato salad on top. The chicken warms the tomatoes a bit, melts the gorgonzola a little (look at the melty bits!) and tastes incredible when served in the same forkful.
I kind of have an addiction to pasta salad (well any pasta really if we are being honest here) and this Balsamic Chicken Pasta Salad is one of the best ones I have ever made. I love balsamic vinegar and the combination of it with the bacon, chicken, tomatoes and onion was just amazing. It is really fresh and bright and felt lighter than a lot of other recipes I have tried in the past.
While this is really great for a summer barbecue side dish, I still really enjoy it in the winter as a meal served with a simple green salad. The chicken, bacon and veggies make it filling and satisfying.
This is a very simple recipe, where the sauce is made whilst the pasta is cooking.
Simply soften some finely chopped shallot in a pan with a little butter. Add in minced garlic, then double (heavy) cream, plus chopped-up gorgonzola, grated parmesan, salt, and pepper. I also like to add in some freshly chopped parsley.
Pasta salad with the powerful flavors of bacon and blue cheese, all tossed in a creamy dressing. With extra flavor and texture from broccoli and green onion, this bacon blue cheese pasta salad will wow at any backyard barbecue or cookout!
Bacon and blue cheese are a classic combo that can make even the blandest burger taste amazing. So, I started thinking that bacon and blue cheese could do a lot for pasta salad also, since pasta is the perfect blank canvas and really shines when paired with anything salty or cheesy.
To my tastes, 1 teaspoon kosher salt in the dressing was the perfect amount for a well-seasoned, but not overly salty pasta salad. However, because seasoning is subjective, and because the pasta salad includes blue cheese and bacon which are also salty, you may wish to start with less salt in the dressing than called for. Then, taste the salad after mixing and sprinkle more in if needed.
Yes you can definitely use frozen broccoli! It will bring down the temperature of the boiling water pretty quickly if you try to add it to the pasta water, so I would probably just steam it in the microwave rather than cooking it with the pasta. I hope you like the recipe Amy! ?
If you make this Portillos copycat salad, please come back and let me know what you think by leaving a comment and rating the recipe! And be sure to snap a photo and email it or tag me on social media, I love connecting with you and seeing your CDLC creations!
Just an FYI, I deconstructed this salad, and when I had it, the tomatoes were Romas, not sundried. Now, they may also tweak the recipe and use sundried tomatoes in the winter when the tomatoes that we get in the north are bland and flavorless. If I were to make this salad in the late summer, I would most likely use fresh tomatoes diced, salted, and drained for 30 minutes or so.
I was transferred to DFW last year and I've discovered that Kroger =/=QFC or Fred Meyers. I can't seem to find a suitable substitute for my favorite pasta salad nor can I find a good clone recipe online. Any QFC deli people out there want to take pity on an expat? (It really is another country here.)
Cant wait to make this soon for me can i use mushrooms and tofu and skip both romaine and iceberg lettuces as am not a big fan of lettuce i never had copycat portilos chopped salad before perfect for my after office meals love your recipes as always brightens up my day everyday after work
Balsamic Chicken Gorgonzola Pasta is one of those recipes that is so easy to make, yet tastes like a gourmet dish. Balsamic vinegar, toasted pecans, penne pasta, sugar, gorgonzola, Parmesan cheese, and chicken makes a tasty combination.
Ben is sharing his special BBQ Chicken Salad recipe today. Trust me, you will want to make this salad again and again. I am already craving it. Mixed greens are topped with bbq chicken, black beans, tomatoes, corn, and fried onions. Warm red potatoes with shallot parley butter are also served on the side. The salad is finished with avocado vinaigrette and blue cheese vinaigrette.
I loved everything about this salad, especially the homemade dressings. They are to die for. I had a salad without the chicken and it was plenty flavorful, so if you want a vegetarian version, go ahead and leave the chicken off. Everyone else loved the chicken though:)
This Gorgonzola Pecan Crunch Salad with Hazelnut Vinaigrette has sweet, salty, sharp, creamy, and crunchy textures and flavors combined together. When I first experimented with this recipe I added grapes and bacon and loved what they brought to the salad.
A simple creamy blue cheese pasta salad recipe made with fresh produce tossed in a double umami creamy roasted garlic miso blue cheese dressing. If you're not a fan of blue cheese, it can easily be omitted from the dressing and still have the umami flavors from the miso!
That being said, there are also other flavourful ingredients doing their magic for this dressing as well. The roasted garlic adds a caramelized mild garlic flavour to the dressing and the miso adds an element of saltiness and umami flavour as well. I also like to lightly drizzle a bit of maple syrup over this pasta salad to give it a sweet and salty flavor because blue cheese and maple syrup go very well together but that is completely optional.
I picked out fresh produce like local baby tomatoes and fresh peas to really give this salad amazing bursts of sweet flavour with each bite. The type of produce you choose is completely personal preference and you can add your favourite fresh local produce to this recipe to make it your own. Here are a few things I like to add to it to switch things up a bit every time
If leaving them raw, simply dip the freshly cut pears in water mixed with some lemon juice to prevent the pears from turning brown. If you prefer to simplify the preparation, you could buy a rotisserie chicken and use the white breast meat for this salad and save the other pieces for another use.
I had just sauteed some mushrooms with zaatar and red wine when I happened on this recipe. I wanted something special for the holiday. I stuck with that spice mixture instead of the sage but put all the other ingredients in as you stated, including the mustard. I cooked it in the pan and in the last five minutes, I added baby spinach for my vegetable. I ended up with your delicious creamy chicken recipe with mushrooms and spinach and it was grand. Next time I will try it with the sage as directed. Thank you, your recipes are excellent.
While the thought of making candied pecans may feel a bit intimidating, they are in fact, pretty easy to make. Hence the name, 5 minute candied pecans. Click here for the recipe. They only require 4 ingredients, and literally only take 5 minutes to make. You can make them ahead and keep them in a container in the fridge. They taste great on salads, topped on ice cream, or just on their own as a quick snack.
I like to buy a family pack of chicken breasts, grill them up, and then have them all week. I like to make lunch bowls with chicken, quinoa and roasted veggies, and of course you can put chicken on salad, like this one. Season them simply and throw them on the grill. I store grilled chicken in large plastic storage bags.
We love using cooked Chicken Breast from our Juicy Instant Pot Whole Chicken but a store-bought rotisserie chicken works great to save time and the only thing you have to cook is the bacon and hard-boiled eggs. This is one super satisfying salad. Since it has so much protein, you can eat it as a main course or as a side salad.

Made the Cobb Salad for dinner tonight. It was delicious. Such a nice change from a regular tossed salad or Caesar salad. Will definitely make this again and will try it with your Avocado Ranch dressing recipe.
Such a great salad! I grabbed a rotisserie chicken and Costco yesterday and made it for dinner, so easy and the dressing got so many compliments! Thanks for another great recipe! Q:how would you store left over dressing? I think I want to make this dressing for other salads too, not just this Cobb salad.
