Column stats not generated in Iceberg Manifest Files when Uniform is enabled

Hi, I opened this https://github.com/delta-io/delta/issues/5469 ~1 month ago.

Basically, Delta Lake doc https://delta.io/blog/delta-lake-3-1/#uniform-iceberg-compatibility states the following:

Delta 3.1.0 includes a new Iceberg support mode, IcebergCompatV2, which adds support for Map and List data types and offers better compatibility for timestamps, writing timestamps as int64, consistent with the Iceberg spec. File statistics (column min, max, rowCount and nullCount) are now converted to Iceberg format.

Anyway when enabling Uniform in a delta lake table (using Delta Lake 3.2.1 + Spark 3.5.3) I do not see column statistics inside Iceberg avro manifest files generated by Uniform. All stats appear as NULL.
