Custom configuration and "repeatable installs" of Deis

Hello,

First things first, thank you for this great product, I started playing with Deis Workflow this week and it is a great experience.

I read a bit about how to customize the Deis platform in the docs - for the most parts, it is via env vars defined in the yaml manifests that must be modified after helmc fetch, but before installing deis on the k8s cluster. What is the recommended approach to save a custom config and make it repeatable, so if deis must be redeployed to a new cluster later on, the manual steps of overriding the default config don't have to be executed again?

Is there a way to pull a custom "chart" derived from the official deis one? But that means falling behind with official releases, when all I really want is to change some configs. I'm really looking for the recommended approach / best practice, and the answer may totally be "we're not sure yet" :)

Similarly, the telegraf config can be changed, but I can't figure out when/where the various env vars have to be set for them to take effect. Those are not in the deis manifests, but in a generated toml, does it have to be in the local env when generating the manifests/installing deis? Again, what would be the recommended approach to save this and make it repeatable?
