Texas Fried
Cabbage

Yield: 4 servings
1 ea Small
head cabbage shredded
1 ts White sugar
6 ea Bacon slices
5 tb Corn
bread mix
1/4 ts Cayenne pepper
1 c Onion chopped
1 ea Fresh jalapeno
pepper seeded & julienned
Salt & pepper to taste
Cider vinegar as
desired
Put
shredded cabbage into a large bowl then sprinkle well with sugar.
Put bacon
in a large & deep cast iron skillet.
Cook over med-high heat until evenly
brown.
Drain, crumble then set bacon aside.
Reserve grease in
skillet.
Mix cornbread mix & Cayenne pepper together.
Saute onion
& jalapeno in hot bacon grease until tender.
Stir in cabbage then season
to taste with salt a& pepper.
Cook for 10-15 mins. until cabbage
wilts.
Stir in crumbled bacon then serve immediately.
