Bubba's Corn Bread Muffins
Categories: Bread, Grain, Dixie, Southern, USA, Side dish, Snack
Yield: 1 dozen

1 c Milk
1/2 c Buttermilk
1/3 c Corn oil
1 ea Egg
2 c Yellow cornmeal
1 c All-purpose flour
3 ts Sugar
1 tb Baking powder
1 ts Salt

Pre-heat oven to 425 deg-F.
Spray a muffin tin with well cooking spray.
Combine all ingredients then mix well.
Spoon this batter into muffin tin cups.
Bake your muffins for 16-20 mins. until golden.
Serve warm with lots of butter & honey or jam.

*NOTE: You may add 1 Jalapeno pepper seeded & minced to the batter or you may add 2/3 c pecans chopped for variations that are very tasty.
