Dixieland Chicken
& Waffles

Yield: 4 servings
1 tb Olive
oil
1/2 c Onion chopped
1 ea Garlic clove minced
1/2 lb Mushrooms
sliced
1 tb Green Bell pepper diced
1/3 c Dry White wine
1 1/4 c
Heavy cream
1/8 ts Sea salt
1/8 ts Black pepper
4 ea Frozen
waffles
3 c Rotisserie chicken shredded
Heat oil in a large cast
iron skillet over med-high heat.
Add onion, garlic, Bell pepper &
mushrooms.
Saute until browned.
Stir in wine then cook until wine has
evaporated.
Add heavy cream, salt & pepper then bring to a
simmer.
Toast waffles then place on a serving plate.
Top with warmed
chicken.
Spoon mushroom gravy over top then serve
immediately.
