Mac’s Lime Shrimp
Salad

1 lb
Shrimp peeled & deveined
1 ea Salad Greens pkg.
2 ea Scallions thinly
sliced
2 tb Olive oil
1 ts Rosemary minced
1 ts Black pepper
2 ts
Garlic minced
1 ts Thyme minced
1/2 ts Cayenne pepper
1 C Cherry
tomatoes 1/2'd
1/2 ts Lime zest
1 ea Lime juiced
Combine
greens, scallions & tomatoes in a salad bowl.
Cover then place in
refrigerator for 2-4 hrs. to chill.
Combine shrimp, oil, herbs, pepper, lime
juice & zest in a bowl.
Toss to coat well then allow to stand at room
temp. for 15-20 mins.
Remove chilled greens from fridge then pour shrimp
mixture over them
Toss well then serve.
*NOTE: You may use frozen shrimp but be sure that they are thawed.
