Doc's Bacon & Sausage Breakfast Casserole

Yield: 6 servings

4 ea Potatoes baked & cubed 3/4"
1/2 lb Bacon cooked & crumbled
1/2 lb Bulk sausage cooked & crumbeld
1 c Onion chopped
1/2 c Feta Cheese crumbled
1/2 c Extra-sharp Cheddar cheese grated
1 c Evaporated milk
6 ea Eggs
Salt & pepper to taste

Cook onions in the fat from the meat until they begin to soften, then add the potatoes.
Cook until browned.
Place potatoes in a 9" pie pan then spread them out to cover pan bottom.
Cover with cheeses then meat.
Beat eggs with evaporated milk.
Add salt & pepper to taste.
Pour egg mixture over meat, cheese & potatoes.
Cover foil then refrigerate 4-12 hrs. or overnight.
Pre-heat oven to 400 deg-F.
Remove casserole from refrigerator at least 25-30 mins. prior to baking.
Bake covered for 15 mins. then remove foil.
bake for another 40-45 mins.
Remove from oven then allow to sit for 8-12 mins. before serving.
