Pompano & Pineapple Salsa

Yield: 4 servings
4 ea Pompano fillets 6
oz each
2 ts Corn oil
Salt & pepper to taste
4 tb Fresh lime juice
Pineapple Salsa:
1 1/2 c Fresh pineapple cubed 1/4"
1 c Orange peeled & sectioned
1/2 ts Jalapeno pepper seeded &
minced
1/3 c Onion minced
1 ts Red pepper flakes
2 ts Fresh lime juice
4 tb Fresh cilantro chopped
1 ts Corn oil
2 1/2 ts Soy sauce
Pineapple Salsa:
Dice orange sections.
Combine all salsa ingredients with lime
juice.
Stir in oil & soy sauce then toss.
Set this mixture aside for 30-45 mins.
Pompano:
Pre-heat oven to 365 deg-F.
Apply oil to fillets
Lightly sear both sides of fillets in
heavy cast iron skillet.
Bake pompano fillets in oven for 8 mins.
Season fillets with salt & pepper.
Add salsa over fillets then serve.
