Edna's Bourbon Street Chicken

Yield: 2 servings

1 lb Chicken leg or thighs skinned & deboned

Marinade:
4 oz Soy Sauce
1/2 c Brown Sugar
1 ts Garlic minced
1 ts Powdered Ginger
2 tb Onion minced
1/3 c Green Bell pepper seeded & diced
1/2 c Jim Beam Bourbon Whiskey
2 tb White wine dry

Cut chicken to bite size chunks
Mix all marinade ingredients then pour over chicken pieces in a bowl.
Cover then refrigerate while stirring often for several hours.
Pre-heat oven to 350 deg-F.
Bake for 1 hr. in a single layer as your baste every 10 mins.
Remove chicken from pan.
Scrape pan juices with all brown bits into a frying pan.
Heat then add 2 tbs. of white wine.
Stir then add chicken.
Cook for 1 min. then serve over rice or potatoes.
