Doc's Meatloaf

Yield: 6 servings

1 1/2 lb Ground beef
1/2 lb Ground pork
4 ea Rye bread slices dry & cubed 1/4"
1 ea Onion chopped
1 ea Egg beaten
1/4 c Half-&-Half
1/2 c Carrot shredded
1 ea Celery rib diced
4 tb Green bell pepper minced
1/2 ts Dry mustard
2 tb Wheat germ
1 tb Worcestershire sauce
Salt & pepper to taste
5 tb Ketchup

Pre-heat oven to 365 deg-F.
Mix beef & pork together.
Combine all other ingredients with beef-pork mixture except ketchup then mix well.
Press mixture evenly into a 9" x 5" loaf pan.
Spread ketchup over top.
Bake for 55-65 mins. until juices run clear.
Remove from oven then drain.
Allow to sit for 5-12 mins. before slicing & serving.
