Cajun Shrimp &
Peppers Cheese Grits

Yield: 4 servings
1/2 c Canadian
bacon chopped
1 c Red bell pepper
1 c Green bell pepper cut to 1/4"
wide strips
1 ea 10-oz can diced tomatoes & green chiles drained
1
1/2 lb Shrimp peeled & deveined
1/2 c chopped green onions
1 2/3 c
s Milk
1 ea 16-oz can chicken broth
1 c Quick-cooking grits uncooked
4 oz Extra sharp cheddar cheese shredded
Cook bacon in a
skillet over med-heat. for 3 mins. until lightly browned while stirring
often.
Add bell peppers then cook for 10 mins. while stirring often.
Add
tomatoes then stir to mix.
Add shrimp then cook for 3 mins.
Stir in green
onions then keep warm.
Combine milk & broth in a saucepan.
Bring to a
boil then stir in grits.
Bring back to a boil.
Reduce heat then cook for 5
mins. until thick while stirring occasionally.
Stir in cheese then serve
shrimp mixture over grits.
