Pecan Hill Sweet
Potato Pie

2 ea 29-oz
cans sweet potatoes/yams drained
1 ea 12-oz can evaporated milk
2 tb
Butter softened
2 ea Eggs beaten
1/2 c Brown sugar packed
1/3 c
Honey
1/2 c Biscuit baking mix
2 ts Vanilla extract
3/4 ts Cinnamon
ground
1/2 ts Nutmeg ground
Pre-heat oven to 350 deg-F.
Coat a 9"
deep-dish pie plate with cooking spray.
In a blender, combine sweet potatoes
& evaporated milk.
Blend until smooth.
Pour into a large bowl and set
aside.
Add remaining ingredients to blender.
Blend until well
combinedbeing sure to scrape down sides as needed.
Add to sweet potato
mixture.
Mix well then pour into prepared pie plate, mounding mixture in
center.
Bake 50-60 mins. until a toothpick inserted in center comes out
clean.
Allow to cool completely on a wire rack before
serving.
