Hi Dede,

Let me start by saying that if it were up to me you'd have your own
Food Network show. I love how much love and effort you put into your
website, and helping others discover the wonders of Med cuisine. I'm
originally from Brazil (right now living in NYC), and terribly miss
some of the goodies made popular by the Lebanese community in my home
country. One of them is the Safiha, the little meat "pizza". The other
one is called "Kibe" in Brazil, but I have no idea of how to translate
it to English. It's a combination of meat and the same grain used in
Tabouli, and back home we have it either baked or fried (sometimes we
even fill it with a sour cream type of "cheese").
One more question I have (and I hope I'm not abusing of your time), is
in regards to the Baba Ganoush. Do you have any tips to remove the
bitter taste of the eggplant?

THank you so much for the time to write such a nice email :)
Well let's start with the eggplant, the only thing to take away the
bitter taste is to add more lemon juice, tahini and garlic, sometimes
with eggplant you'll get one that is bitter they are not ALL bitter,
if you find that the kind you are using is always bitter then try a
different type of eggplant, they all work for baba ganoush :)
Well the safiha recipe is coming soon, but I want you to check out the
lahme bi ajeen video, it's pretty much the same concept but in a
different form :)
And yes the kibbe video is coming soon as well, I have had many
requests for this and I will try to get these videos out as soon as
possible :)
