I am so happy that I have come across your site! I live very close to
Dearborn, MI which has a massive Arabic population. I have come to
love Arabic food and I am converting friends and family to the
wonderful flavors of Middle Eastern cuisine. Unfortunately, finding
good recipes for Middle Eastern food, even on the internet, is nearly
impossible. Your recipes and your video instruction are truly a
blessing! I was wondering if you could help with a few recipes, or
let me know if you might do them in the future. First and foremost,
the local Arabic restaurants all serve a dish that is simply called
"Deboned Chicken." It is literally just grilled chicken served with
rice, but the chicken tastes phenomenal! I must know how they make
grilled chicken taste so divine! I have to assume the marinade is the
key. Any ideas? Also, I would love to know how to make Ghallaba (or
Ghallaya?). The combination of vegetables and that red sauce are
absolutely amazing. I just had a tenderloin sajii (sajji?) sandwich
and it was also amazing...I saw your meat with hoummous recipe and I
was wondering how to substitute lamb. There is a Lamb with Hoummous
appetizer at our local restaurant and the lamb is just to die for.
They are little bite sized pieces of lamb and they taste like beef
tenderloin. Is that a marinade or a sauce? What cut of lamb do you
use? I know I am asking for too much but the food is so good and I am
so excited to have found you!
