Hello again Dede! I had a couple of questions regarding pita bread.
First off, it seems as if there are different kinds of pita
bread...There is the thin "pocket" pita, and the thicker and softer
"pocketless" pita. I know you are familiar with La Shish formerly in
Dearborn, and they also had this very thin, very large bread that a
woman would make on an outdoor concave grill - it was crispy. Then,
of course, La Shish would make their hot and fresh out of the oven
small pitas that were thicker than the pocket pitas you buy in the
store, but they still had a pocket...So, my first question is to ask
if these breads all have different names or are they just different
variations of pita bread? My second question is to ask if you plan on
showing us how to make arabic pita bread. I am specifically trying to
re-create the hot and fresh table pita breads that La Shish made.
Those fresh out of the brick oven pitas were what made La Shish stand
out from all of the other arabic restaurants in Dearborn...Thanks
