Rotissery chicken

Hello Dede,
 
I was glad to find your site on Utube, what a great thing you are doing.
I'm Hispanic with a great taste for any ethnic food.
I was wandering about that red lemony rotissery chicken I've tryed at
a couple of places.
I have a neighbor whon told me the way to make is:
Clean chicken, marinate with lemon juice, before torissery add paprika, a bit of
not meg and what I called the secret addition is citric acid. Then place it
on BBQ or oven if I don't have a rotissery machine.
Could you verify this?
There is a restaurant I've had the best chicken at, they serve it with the garlic sauce
and pita bread, along with sides of white rice, tabule etc..
 
Can you please help me out by verifying the ingridients my neighbor told me about
and let me know what this chicken is called in Arab/Mediteranean style?
 
I appreciate any help you can provide.
 
I'm also curious about the white rice mediteranean style, it has a bit of herps in it
and it looks like it may have some oil add to it, but it is cooked coiled I'm sure.

THanks for the comments!
For rotisserie chicken, I use 2-3 cloves minced garlic, paprika, olive
oil, salt and lemon juice. You can also add nutmeg and cinnamon, they
add great flavor. You can also put half an onion and lemon peal in
the core of the chicken, they add great aromatic flavor.

I also have a garlic sauce recipe/video on my website that goes great
with the chicken. For the Mediterranean rice, check out my brown rice
recipe/video, you can use brown rice or white rice and when it's done
you can add chopped fresh parsley on top. Let me know if you have any
