Debian package recompile.

Hello, I have never used Debian, but I have seen it in action and it
looks very good. Anyway, I might need to run some heavy duty stuff,
and I know that recompiling for the specific architecture does provide
a significant boost. I am wondering how easy it is to recompile a
debian source package into a binary package, and then install (or
update, depending on the situation). Is this automated somehow with
something like apt? Or is this some long tedious process? I am just
thinking about upgrading some stuff from some older distros, and
Debian's stability is a big plus (simply cannot have the computer go
down!). I am thinking of something along the lines of Gentoo, but that
stuff is bleeding edge and new, so I thought I'd check here first. Any
thoughts?
