Commonly used in soups or pasta sauces. It is typically the size of a

Actually, we call it "corn kernels" in the States but would recognize
the term maize. In the States it also comes in canned or frozen small
squares called kernels.

In the same general family as a green onion or scallion. If you can't
get it, I'd substitute a green onion. If that doesn't work, try an onion
or shallot. It is a milder taste than an onion. It isn't a very common
vegetable here so you may have to go look for it in a green grocer.
There used to be a wonderful cooking APA where we sorted out all of
these kind of things and exchanged recipes. I miss it.

Needless to say, I've eaten it only twice. (The second time
just to see if I was insane or had a bad version of Chorizo
the first time).

P.S. Chorizo is popular in Mexican cooking, I believe, and
possibly originated there? It's widely available in U.S.
supermarkets, but with some proper net searching, you may be
able to learn how it's made.
P.P.S. My first search on a search engine revealed a recipe
for Chorizo: http://www.mexconnect.com/foodboard/messages/696.html
I only know food things in German and English, (and I'm not sure
how reliable my German is) but here's a try at german translation
of some of the things in the recipe:
pork is Schweinefleisch, fat is Fett
lard is Fett
garlic is Knoblauch
not sure about oregano
cinnamon is Zimmt
cloves are Nelken or something (same word as the flower carnation?)
vinegar is Essig.
I don't know if any of that is at all similar to danish, but
possibly some words.
Leeks look a lot like giant green onions (the long thin kind) but
are of course much bigger. Maybe 2-3 centimeters in diameter?
