Trusted Remote Store with remote Store Type

Hi there. I noticed the documentation for Trusted Remote Store with remote Store Type mentions the support is experimental. Are there installations out there using it in production? Has anyone considered but decided not to use it? I understand from the discussion on Zulip that some institutions decided not to use it because it would be difficult or impossible to trust the remote store. In our case we'd be trusting ourselves and be using it for very large files as we do not have object storage which I believe to be the preferred approach.

What we're thinking matches closely the approach mentioned in this thread by Jim Meyers wherein Dataverse would run more than one store at a time, putting smaller files in one store (a local file store where Dataverse would do all of its normal functionality), and putting larger files in another store that will still control access/access tracking but will avoid operations that require Dataverse to read all of the data.
