There's one for Copy FTP URL but I use the HTTP URL frequently and
would like to know how to create a shortcut for or reassign the FTP
one. Thanks!

You can introduce your own custom shortcut in System Preferences → Keyboard → Keyobard Shortcuts by adding Cyberduck to Application Shortcuts.

I've tried that but it doesn't seem to take. I think my hang up is
defining a submenu item in the custom keyboard shortcut section. I've
tried "HTTP Copy" and "⌘⌥⌃ C" as the shortcut and I just get the error
system sound.

I have the same problem. Using Cyberduck 4.2.1 (9350).

I have tried to set "HTTP URL" in the OSX Application Keyboard Shortcuts, to "⌥⌘C".
My shortcut appears in Cyberduck next to the menu item. Usually, the shortcut doesn't work. It always makes the "Edit" menu light up, as if it had worked, but the file URL doesn't actually copy to the clipbord.
Although, sometimes, it DOES work. Maybe like once after starting the program. Very Strange.
Perhaps it has something to do with the Globe Icon and space before "HTTP URL" in the menu item.  Please remove those, if that might help.

This issue is now tracked in http://trac.cyberduck.ch/ticket/7045
