Enhance pivot to support text-only pivot mode.

Currently, value fields can only be pivoted to numbers - consider allowing
pivots for text values as well.

Maybe allowing the selection of the aggregate functions is a good idea? Currently pivot works doing a *sum* aggregation, it would be nice to have things like: max, avg, min, first, last, sample, etc.
