RECIPE: Super Easy Pasta with Zucchini

Having just returned from Italy, I became inspired to learn more about
pasta sauces. I got some great leads from an Italian friend there
about what to look for in an Italian cookbook and bought one at the
airport. Here's my first attempt. It turned out great!

Sauce:
2-3 zucchini (I used 2 zucchini and 1 yellow squash)
6 Tbsp olive oil
3 cloves of garlic (I used 4 large :)
3 Tbsp fresh basil
2 Fresh Red Chile's sliced (I didn't have these)
Juice of 1 lemon
5 Tbsp Yogurt cheese w/water (original recipe calls for cream)
4 Tbp grated Parmesan cheese
Salt & Pepper

8oz Quinoa Spaghetti pasta

Use a potato peeler and slice the zucchini into thin strips as long or
short as you like. Add enough water to the yogurt cheese to get the
texture of thick cream. Heat oil and cook crushed garlic for 30
seconds. Add zucchini and cook over low hat for 5-7 minutes. Remove
from heat. Stir in basil, chile, lemon juice, yogurt cheese milk and
parmesan and season. Keep warm. Cook pasta til tender but still firm
to the bite. Drain thoroughly! Put sauce on top of pasta to serve.

Note: I am finding the most important thing is to avoid cooking the
pasta too long AND to make sure it is well drained. This was my first
recipe and it was delicious. I didn't have any red chiles not being
in New Mexico and all :( I bet you could substitute red peppers. I
just left it out. A great way to use some of your summer vegies from
the garden.

That sounds really yummy and provides a refreshing alternative to tomato paste-laden sauce (which I can't digest anyway).

Please remind me (and share with everyone else) where online you purchase quinoa spaghetti pasta. Which brand is the best in your experience? I haven't been able to find any anywhere in the Denver area!

I think there is only one company that makes Quinoa pasta and I have
never had any problem finding it in any health food grocery store.
Sometimes they don't have all the varieties, but they usually have at
least one. Look for the turquoise box. But read the label, because
they also have one made with wheat. The company is Ancient Harvest.

And they have bulk prices for all their quinoa proucts INCLUDING the
linquine which I haven't been able to find anywhere! I had even been
considering buying a pasta maker because linquine is my favorite.

For those who don't know, Quinoa digests in the body like a vegetable,
so you can have your pasta without the wheat AND combine it with
proteins if you want!

PS The Quinoa flakes make a great breakfast cereal. I serve it with
yogurt and maple syrup. Excellent. That has been harder to find here
in Indiana, and I've ordered that online. I have to tell you that the
prices on the Ancient Harvest website are a fraction of what I've been
paying. You have to buy a case, but it's still much better. If you
try to order, let me know if you have any trouble - like maybe you
have to be a registered outlet or something.

Quinoa UPDATE!

I couldn't resist and decided to try to order some Quinoa on the
Ancient Harvest web site. The good news is that there was no problem
and the price is literally 1/3 what I had to pay on the other site. I
got flakes and linquine. Hurray! The bad news is that the ordering
is really clunky. Good luck trying to get back to your cart if you
leave it. I had to add an item and then remove it to find the cart
again. But I'm not complaining at that price!

Hi Elaine,

Nope. I'm definitely not a vegetarian. I mainly eat fish and chicken
with a little of the other meats occasionally. My little vata body
must have that protein! I bet you could add some shredded or diced
chicken into that zucchini recipe and it would be great. But in that
case it's even more important to use the Quinoa pasta and not wheat.
