I am trying to figure out a way to get a smooth transitional color in a
block of text. I can change the color of the whole block, but what i
want to do is have the text change smoothly to a color that will show up
on a background with varying colors.

What program are you using?

I have played with this some and found it is hard to do especially if the
text is small. It's probably best to find a color that works best with all
of the colors but failing this you might try rendering the text to mask,
placing it where you want it and applying a lot of contrast or contrast and
invert or any effect you can think of to make it the way you want.

If you are using Photo Paint.

Create a mask from object (text) - fill selected area with gradient fill or
paint with colors of your choice.
