Well, there is a reason why they call it GLUTEN (Glue). Gluten is
formed when the gliadin and the glutenin in the endosperm of the wheat
is combined during processing. When this is ingested, in the form of
foods, like breads and pastas, etc., it actually coats and tramples
the villi in your small intestines. These villi are responsible for
the proper absorption of nutrients from foods. Now, if your villi are
coated and trampled by GLUTEN, how do you expect things to go well in
your gut?
You bloat, have gas, diarrhea, maybe vomit and all because of GLUTEN.
WOW, sign me up for that. You might have Celiac Disease, in which
case you need to be tested, refer to the Celiac Disease Foundation's
website at http://www.celiac.org for more information.

Pass the word. I have done a lot of research into gluten intolerance
and celiac disease and it's quite widespread issue. Don't do anything
without proper consultaion with your MD., that's if he/she has any
idea about it.

We should also start writing the different Fast Food establishments to
incorporate gluten free products. Pizza Hut, Burger King, Olive
Garden, so they can think about the impact on their bottom line if
they have at least 1 item that is gluten-free.

It never hurts to try and you know the saying "The squeaky wheel gets
the grease".
