This one can be served warm or cold.

Red-Onion Mojo

1/2-3/4 cup Extra Virgin Olive Oil
2-4 large Red Onions - very large - halved lengthwise then
thinly
sliced crosswise(5 cups)
1/2-3/4 cup Lime Juice - fresh
2 cups Cilantro - loosley packed and coarsely chopped

Heat oil in a heavy skillet over medium-high heat.
Add onions and saute until tender and translucent, <b>do not brown</b>
about 10 minutes.
Add lime juice and simmer for 3 minutes.
Season to taste with salt and pepper.
Remove from heat and place in a large glass bowl. Stir in the
cilantro and serve.
